Cabrales is an internationally known blue cheese from Asturias.
Cabrales cheese is a natural product made with raw cow's milk or with a combination of cows, sheeps and goats milk. The milk used comes from controlled production area cattle. Once the cheese is processed, it is taken to natural mountain caves to cure for two to four months. These caves are high in humidity (about 90%) and the temperature varies from 8 to 12 C, which helps the growth of yeasts (especially Penicillium.) As a result, the cheese cures in blueish-green shades, very like other Blue cheese, with a strong, spicy flavor. |
